Homemade Granola


I've been obsessed with eating cleaning lately and it's slowly getting hard to convince myself to put carbs in my system. This is about the only way I'd eat it because it's unbelievably good and too damn addicting. I'd like to think of my recipe as extremely healthy because there is no oil, no refined sugar, and a great deal of nuts in ratio to oats.


A lot of recipes call for a 1/4 cup of vegetable oil...I was so rattled. I don't know the function of vegetable oil here and would like it to remain that way. Instead, I decided to use peanut butter in my first couple of batches but didn't notice any difference when I left it out the third time.


I eat this every morning with yogurt and blueberries in a parfait style. It's so good that I would keep munching on them after my parfait. Very dangerous...I should limit the production of this before it takes over my diet.

Avocado & Brie Grilled Cheese

Avocado and Brie...need I say more? The Avocado is quite subtle in taste but lends an extreme creaminess to the sandwich. I love having it on just about anything. It's a much healthier alternative to butter and, in my opinion, much more flavourful.

As for the Brie, I can't say that I like it with everything. Sure, life was good when I was munching on Brie and Baguette while sitting on the grass field in front of the Eiffel Tower. Can't complain about that. But there is something about the Brie, a bitterness I can't really explain. It can throw things off a little sometimes.

Vanilla Gelato


Since I got my ice cream machine, I've been making ice creams and sorbets every other day. Horrible right? Because it means I'm eating a tub or so of ice cream Every. Other. Day.      Ahhhhhhhhhhg!

This is the best ice cream combination I've tried. It's got plenty of sugar to act as an anti-freeze and there are lots of egg yolks making it smooth and creamy. Don't be afraid to use egg yolks in these recipes because you need to cook the custard to 180 degrees which will be plenty to kill the bacteria.

Oreo Cupcake Cheesecakes


These were hands down the most delicious cheesecake recipe I've had. You don't need to worry about under baking or cracking because they are so small in size. It's my first time experimenting with mini cheesecakes since I always wanted to get the special cheesecake pans to make them. Using liners worked fine since they cool to a pretty nice shape and you can just peel away the wrapper and serve. I do suggest peeling it off cause it's nice to see the bottom crust.

Homemade Greek Yoghurt

I'm sure you've all heard that Greek yoghurt is the super food of super-foods. The first time I had it was in Greece 5 years ago.I thought it was the worst thing I have ever tasted in my life and had never gone near it since. It was tangy and thick and physically impossible to swallow. Although it was served with a dollop of honey, I was too foolish to know that I had to stir the two together before consuming.

Cinnamon Swirl Bread


This bread is both stunning and tasty, I couldn't help but eat half of it on the day it was made. So much for my "clean" diet.

I found the idea on La formula del biscotto and knew it had to be done. The sweet bread recipe I pulled from a Chatelaine magazine, April 2012 edition. It turned out great so I'm going to stick with it until I come across a better one.

Speaking of cinnamon bun recipes, there was one that I used in Norway all the time and it has never failed me. However when I came back from exchange, the recipe never worked the same. The dough would not bake properly in the centre and always turned out extremely dry on the edges. Those were in the shape of individual buns so I wonder if having it in a cake pan this time made a difference.
