We went camping a couple of weeks back and I was happily in charge of the S'mores supplies. With all these Graham crackers and marshmallows lying around, I'd be silly not to do something fancy. I'd have loved to make the marshmallows myself but since I was packing for Vancouver, I had already sent my stand mixer away.Those of you who have made marshmallows in the past know that it takes a long time to whip that sugar to a fluffy stage and I'm sane enough to not attempt it by hand.
I did some of the brownies in a 8-by-8 inch pan and the others in muffin liners. Listen to me when I tell you to never do them in a pan. The marshmallow topping makes it extremely difficult to portion and I had to use scissors in the end.
I used whole Graham crackers in the pan, but since it was hard to size it for the muffin tins, I crushed them and tossed it with butter before pressing them in. Sorry, once again I do not have "how-to" photos.

Fill the liners 1/2 way up with brownie batter and bake for 20 minutes. Top with large marshmallows and bake for another 5-10 minutes. If it's not browned to your liking then you can broil it for a bit.
It was absolutely delicious but very sweet with the marshmallow topping. If you're not a fan of sweets then you can go easy on the sugar in the brownie batter.
I challenge you to make this with everything done from scratch. That's what I'm gonna do anyway ...eventually. Now that I'm home with my parents, my baking abilities are limited to bread and croissants. Gotta bake only what my parents are willing to eat right?
I will attempt crullers in the near future though. Think my daddy is a fan of Tim Hortons.
