Mountain Dew Cupcakes

The idea for these cupcakes came from "Mountain Dew and Dorito Cupcakes" that someone had posted on my Facebook wall. I didn't like the idea of eating Doritos off my cupcake so I left that part out. I also cheated and left out the main ingredient : Mountain Dew. I didn't think having soda pop in my frosting will do much for the flavour. Mountain Dew is basically a lime and lemon flavoured drink with bubbles. Since I was going to lose the carbonation anyway, I might as well just substitute the whole thing with lemon and lime juice.



I used the same vanilla cake recipe that I used for my pink rose cake and the basket of flowers cake. It's unbelievably moist and I don't think I'll ever need to use another vanilla cake recipe; this is the winner. The only change I made to it was adding 2 tbsp each of lemon and lime zest.

The frosting is very lemony on it's own, but combined with the cupcake it's got the perfect balance.





Lemon Cupcakes:
Vanilla cake recipe
2 tbsp lemon zestMountain Dew Frosting:
2 tbsp lime zest


Mountain Dew Frosting:
1 stick of butter
1/2 cup of shortening
3 cups icing sugar
1 tbsp lime zest
The juice from 1 lemon and 3 limes
yellow and green food coloring

 The limes don't produce a lot of juice so I find it helpful to microwave it first and roll it on the counter a couple of times.

1. Cream the butter and shortening until fluffy.
2. Add in the icing sugar, 1 cup at a time.
3. Add the lime zest and the juice.

If it's too runny then add more icing sugar. Taste for the right balance of acidity and sweetness.

Use a piping bag fitted with a star tip. 
I colored the entire batch with yellow coloring first and filled one side of a piping bag with half the frosting. Then color the rest of the frosting with green, and fill the other side of the piping bag.
Squeeze the frosting down to the tip of the bag and pipe into a bowl until both colors are coming out at the same time. Decorate the cupcakes by making a big swirl in the center.
